I've read all of Michael Pollan books and the one I highly recommend is his latest, "Cooked: A Natural History of Transformation". I've cooked all my life and spending most of my time cooking and not reflecting on what I do. It's nice to have someone on the outside looking in, and being able to articlately convey how and why we do what we do as cooks. Although Michael Pollan advocates cooking, (I do, too!) I know that is not being realistic for most of you. So, I am here to help provide the next best solution. I want to get to know you and I want you to know me, your cook. My whole concept around ENCLAVE is to make you feel like I'm cooking right in your own home.
